Ingredients

  • 2 large yellow onions, chopped
  • 2 large green bell peppers, seeded and cut into chunks
  • 1 large red bell peppers, seeded and cut into chunks
  • 4 cloves garlic, finely chopped
  • 3 Tbsp. extra-virgin olive oil
  • 1-3/4 pounds sweet or hot Italian sausage, cut into chunks
  • 1 tsp. dried oregano
  • Pinch of red pepper flakes
  • 2 Tbsp. tomato paste
  • One 14-ounce can diced tomatoes, undrained
  • 1/2 cup dry white wine
  • 1/4 tsp. salt
  • Chopped fresh basil, for garnish

Step 1

Toss the onions, green and red peppers and garlic together in a bowl. Heat the oil in a very large skillet over medium-high heat. Add the sausages and brown them, turning occasionally, 7 to 10 minutes. Stir in the oregano and pepper flakes and cook for 30 seconds more. Stir in the tomato paste and cook for another minute. Add the diced tomatoes with their juices, the wine and salt; simmer for 2 minutes.
Arrange half of the onion-and-pepper mixture in the bottom of a slow cooker. Cover with half of the sausages with their sauce, then the rest of the onion-and-pepper mixture. Top with the remaining sausages and sauce. Cover and cook for 4 hours on low or for 2 hours on high. Garnish with basil and serve.
