Ingredients

  • FOR THE CRUST
  • 2 cups vanilla wafers, crushed (64 cookies)
  • 1/4 cup packed brown sugar
  • 1/3 cup butter, melted (5 Tbsp. + 1 tea)
  • FOR THE FILLING
  • 1 stick butter
  • 1/2 cup packed brown sugar
  • FOR THE TOPPING
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped nuts (pecans, walnuts, or almonds), toasted

Preparation

Step 1

Preheat oven to 350 degrees. Butter a 9x13 glass baking dish.

For the crust: crush vanilla wafers in zip lock using a rolling pin. Combine crushed cooked with 1/2 cup brown sugar and 1/2 cup melted butter in a bowl. Press mixture into prepared baking dish, using a measuring cup to tamp down crust. Bake just until set, 8 minutes.

For the filling: melt together 1 stick butter and 1/2 cup brown sugar in a saucepan, stirring to combine. Bring mixture to a boil and boil 1 minute without stirring.

Immediately pour mixture over hot crust, then return pan to oven. Bake bars an additional 10 minutes,m remove, and let cool 2 minutes.

For the topping: sprinkle chocolate chips over toffee and let stand until chips are glossy, about 5 minutes. Spread chocolate using an offset spatula, then sprinkle nuts on the top of the bars. Let bars cool completely.

Remove toffee from pan. To break toffee into pie3ce,s insert top of a paring knife into toffee and twist until pieces break.
