Ingredients
- 2 C. flour
- 2 T. sugar
- 1/2 t. salt
- 1/4 t. baking powder
- 1/2 C. cold butter (I used regular Smart Balance.)
- 2 - 15 oz. cans of peach halves, drained & patted dry (I used Kirkland sliced peaches.)
- 1 C. packed brown sugar
- 1 t. ground cinnamon
- 2 egg yolks – beaten
- 1 C. heavy whipping cream

Preparation
Step 1
In small bowl, combine flour, sugar, salt, & baking powder. Cut in butter until crumbly. Press onto bottom & 1 ½ inches up side of a greased 9” spring form pan. Place pan on baking sheet. Arrange peach halves cut side up in crust. Combine brown sugar & cinnamon. Sprinkle over peaches.
Bake at 350 degrees for 20 minutes. Combine egg yolks & cream. Pour over peaches. Bake 25 to 30 minutes longer or until top is set. (It may take an extra 10 to 20 minutes depending on your oven.) Cool on wire rack & refrigerate leftovers.
Can be topped with whipped cream, sprinkles, or ice cream if desired or served plain.
