Ingredients

  • 3 eggs
  • 3/4 C flour
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. Herbs de Provence
  • 4 T. parsley leaves (fresh)
  • 1 C whole milk
  • 3/4 C grated parmesan

Preparation

Step 1

Preheat oven to 400 degrees.

In a blender, combine eggs, flour, salt and pepper, herbs, milk, and cheese. Blend on medium.

Spray mini muffin tins with nonstick spray. Pour batter into muffin cups, filling 3/4 C full. Bake until puffed and golden brown, about 2j0 to 25 minutes.

Remove popovers and cool on wire rack. Keep in storage container.
