Pumpkin Squares

Ingredients

• Frosting:
• 4 eggs, slightly beaten
• 1 cup oil
• 1 2/3 cups sugar
• 1 (16 oz.) can pumpkin
• 2 cups flour, sifted
• 2 teaspoons cinnamon
• 2 tablespoons baking powder
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1 (3 oz.) package cream cheese, softened
• 1/2 cup butter, softened
• 1 teaspoon vanilla
• 2 cups confectioners' sugar

Preparation

Step 1

Combine eggs, oil, sugar and pumpkin until light and fluffy. Mix together dry ingredients and add to pumpkin mixture. Spread in an ungreased jelly roll pan. Bake at 350 degrees for 25 to 30 minutes. Let cool and then spread with frosting.

Frosting:
Cream together butter cream cheese and then add vanilla and sugar. Mix until smooth.
