Corn, Bacon, Potato Chowder

Ingredients

  • 1 Medium Yukon Gold Potato
  • Cooking Spray
  • Onion Powder
  • 2 cups frozen corn
  • 1 cup red peppers diced
  • 4 oz Canadian bacon diced
  • 2 cups skim milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1/8 teaspoon hot pepper sauce or to taste

Preparation

Step 1

Puncture potato in several places. Microwave on high power until tender, about 8 minutes . Allow to cool, peel and mash.

Spray a large saucepan with cooking spray. Add onion powder, corn and red peppers. Saute over medium heat stirring frequently for 5 minutes.

Stir in bacon, milk into pan. Stir in potatoes. Season with salt, pepper and hot sauce. cover and simmer 10 minutes.
