Beef, Poblano and Potato Enchiladas 0 Picture

Ingredients

  • 1 pound ground beef
  • 1/4 cup chopped onion
  • 2-3 Poblano peppers
  • 1 packet taco seasoning
  • 8-10 tortillas
  • 7-10 small red potatoes
  • 1-2 cans red Enchilada Sauce
  • 1 to 1.5 cup shredded cheese

Preparation

Step 1

Roast peppers in broiler or directly on stove top burner. Scrape off the charred outside, remove the pod and seeds and slice.

Boil potatoes for 10-15 minutes until soft. Dice into small cubes.

Brown beef, onion, pepper and potato. Add seasoning, and water to cover, simmer until reduced.

Pour 1/2 of a can of sauce and into beef mixture, simmer for a couple minutes untill thickened.

Cook tortillas on a dry skillet.

Fill tortillas and place in dish seam side down.

Top with the rest of sauce and cheese.

Bake at 350 for 20 minutes or until heated through and cheese is melted.
