Ingredients

  • 1 whole Shallot, Minced
  • 4 Tablespoons Olive Oil, Divided
  • 1 Tablespoon Honey
  • 1 pinch Salt And Pepper, to taste
  • 2 Tablespoons Red Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • 2 teaspoons Fresh Rosemary, Minced
  • 1 pound Fresh Baby Spinach Or Spring Mix
  • 3 Tablespoons Parsley
  • 3/4 cups Crushed Smoked Almonds
  • 4 ounces, weight Crumbled Goat Cheese

Preparation Instructions
Saute shallot with 1 tablespoon olive oil. Add the honey. Season with salt and pepper.
Transfer to a small bowl and whisk together the vinegar, mustard, and rosemary. Add the remaining olive oil and whisk again.
Combine the spinach/spring mix and parsley. Add the dressing and toss to coat.
(Crush almonds in a food processor, about 10 pulses.)
Plate the spinach mixture on plates. Top with crushed almonds and goat cheese.
