Ingredients

  • 2 tomatoes, diced
  • 1 green bell pepper, seeded and diced
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 2-3 jalapeno peppers, seeded and minced
  • 2 Tbsp minced fresh cilantro
  • 2 tsp lime juice
  • 1 tsp ground cumin or to taste
  • 1 tsp dried oregano or to taste
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp ground cayenne pepper (I add a little more)
  • 2 c canned crushed tomatoes

Step 1

Combine all ingredients except crushed tomatoes in a large bowl; mix well. Place about 3/4 of the mixture in a food processor fitted with a steel blade (less if you like chunky salsa). Process for about 5 seconds. Return to bowl and remaining salsa mixture. Add crushed tomatoes and mix well.

Cover tightly and allow to chill at least 1 hour before serving to meld flavors. Makes about 4 cups.
