Ingredients

  • Yields 4-6 servings
  • 2 TBS olive oil
  • 6 small red potatoes or yukon golds sliced
  • 1 cup torn fresh spinach
  • 2 TBSP slided green onion
  • 1 tsp crushed garlic
  • salt and pepper to taste
  • 6 eggs or 1 carton egg beater
  • 1/3 cup milk (if not using egg beater)
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Preheat oven to 350 degrees

Heat olive oil in a med skillet over med heat. Place potatoes in skillet , season with salt and pepper and cover and cook for approx 10 min, or until tender but firm. Mix in spinach, green onions and garlic. Season with salt and pepper. Continue cooking 1-2 minutes or until spinach is wilted

In a med bowl beat eggs together with milk or just use eggbeater. Pour in skillet over vegetables. Sprinkle with cheddar cheese.

Bake in 350 degree oven for approx 20-30 minutees until eggs are firm .
