Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon ground ginger
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • slight sprinkle of cayenne
  • 1 tablespoon sugar
  • 14.5 ounce can diced tomatoes with juice
  • 4 medium boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • salt
  • pepper
  • 1/4 cup heavy cream
  • 1 tablespoon lemon juice

Step 1

To preheat the Instant Pot, select Saute on high heat. Add the butter.

When the butter sizzles, add the onion, garlic, and ginger and stir. Cook for 3 to 4 minutes, stirring, until the onion is translucent.

Select Cancel and add the cumin, paprika, and cayenne and stir, scraping the bottom. Add the sugar and tomatoes with juice, stir, then add the chicken and broth. Nestle the chicken in the mixture and season with salt and pepper. Secure the lid.

Select Manual and cook on high heat for 7 minutes.

Once cooking is complete, use quick release. Carefully remove the chicken and chop.

Select Saute and simmer for 4- to 5 minutes until the liquid is reduced. While simmering, add the cream and return the chicken to the pot.

Add the lemon juice and stir. Season as needed. Serve.
