Ingredients

  • GLAZE:
  • 2 1/2 lbs. cream cheese
  • 1 1/2 C sugar
  • 1 C unsweetened cocoa
  • 3 eggs
  • 1/2 C whipping cream
  • 2 T kahlua
  • 1 1/2 T frangelica
  • 1 t vanilla
  • 1/4 C kahlua
  • 1/4 C frangelica
  • 2 T Meyers rum
  • 12 oz. bittersweet chocolate
  • 1/4 C whipping cream
  • 1/4 C unsalted butter

Preparation

Step 1

1. Line bottom of springform pan with wax paper. Spray with Pam.

2. Beat cream cheese and sugar til smiooth. Gradually mix in cocoa. Add eggs one at a time, beat well after each. Pour into springform pan.

3. Bake 300 deg about 1 1/2 hours, until outer 3 in. is puffed and center is set but moist looking.

4. Cool 15 mins. then loosen sides, cool another 30 mins. and remove outer ring. Chill 6 hours.

FOR GLAZE:
Boil liquers until reduced to 1/4 C. Reduce heat to low, add chocolate, cream and butter. Stir until smooth. Cool until thick but still pourable. Pour glaze over top and sides of cheesecake. Invert cake on platter to serve.
