Ingredients

  • 6 stalks celery, chopped
  • 2 cans (15oz each) chickpeas, drained
  • 10 oz grape tomatoes, halved
  • 1 C crumbled feta
  • 4 T each extra virgin olive oil and balsamic vinegar
  • 2 cloves garlic, minced
  • 2 t pepper
  • 1/2 t salt
  • 1/2 C each fresh-chopped parsley and thyme

Step 1

Gently combine celery, chickpeas, tomatoes, feta, olive oil and balsamic vinegar. Mix in garlic, pepper and salt. Sprinkle fresh herbs overtop and stir to combine.
