Ingredients
- 6 stalks celery, chopped
- 2 cans (15oz each) chickpeas, drained
- 10 oz grape tomatoes, halved
- 1 C crumbled feta
- 4 T each extra virgin olive oil and balsamic vinegar
- 2 cloves garlic, minced
- 2 t pepper
- 1/2 t salt
- 1/2 C each fresh-chopped parsley and thyme

Step 1
Gently combine celery, chickpeas, tomatoes, feta, olive oil and balsamic vinegar. Mix in garlic, pepper and salt. Sprinkle fresh herbs overtop and stir to combine.
