Peanut Brittle (Microwave)

Ingredients
- 1 cup sugar
- 1/2 cup light corn syrup (white)
- 1 tsp salt
- 1 cup plus of shelled roasted salted peanuts
- 1 TBLSP margarine
- 1 1/2 tsp baking soda
- 1 tsp vanilla

Step 1
Heavily grease baking sheet with margarine.
Combine sugar, corn syrup, and salt in 3-quart (microwavable) dish. Stir in peanuts. Microwave on high (100%) until light brown for 10 minutes, stirring once or twice during cooking. Remove from microwave and immediately stir in margarine, baking soda, and vanilla until light and foamy. QUICKLY spread on greased baking sheet (Spread as thin as possible).
Cool. Turn upside down and remove peanut brittle onto wax paper. Wipe margarine off bottom of brittle.
Break into pieces and enjoy!!
