Ingredients

  • 1/2 cup dried black beans or 19 ox. can
  • 1 bay leaf
  • cooking spray
  • 1/2 cup peeled and chopped broccoli stems
  • 1/2 cup cubed carrot
  • 1 cup cubed celery
  • 1 cup chopped onions
  • 1 tbsp. each thyme and basil
  • 1/2 cup dry white wine
  • 8 oz. boneless, skinless chicken breast
  • 4 tbsp. barbecue sauce
  • 1 cup chicken stock
  • 12 oz. evaporated skim milk
  • 2 cups broccoli florets
  • 1 tbsp. cornstarch dissolved in 2 tbsp. cold water
  • 1 tbsp. liquid smoke
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. Tabasco
  • 1/4 cup chopped fresh cilantro

Preparation

Step 1

Cook chicken breast. Cube when cooled. Saute vegetables until tender-crisp. Place with all ingredients in a large stock pot and simmer for 30 mins.
