Preparation

Step 1

Steam pan: use either a sheet pan with a 1 inch lip or a lasagna type pan w/higher sides or a cast iron frying pan

To prepare oven for hearth baking preheat oven with a baking stone & steam pan in place for at least 45 mins.
Slide the shaped dough onto the preheated stone.
Lay a kitchen towel over the oven's glass window (tom prevent cracking from splashing)
Wear an oven glove to prevent burns pour about 1 cup (or as recipe calls for) of hot water into the preheated steam pan. ( a watering can with long spout makes this easier)
Using a spray bottle you can also spritz the oven walls a couple of times to create additional steam.
Remove towel before closing oven door.
