Ingredients

  • Dough for 1 (9-inch) single-crust pie
  • 3/4 cup light corn syrup
  • 1/2 cup coconut milk
  • 1/2 cup sugar
  • 3 eggs
  • 3 tablespoons butter, melted
  • 2 tablespoons macadamia or hazelnut liqueur, if desired
  • 1 1/2 cups macadamia nuts, coarsely chopped

Step 1

1. Heat oven to 350°F. Line 9-inch pie pan with dough; crimp edges.

2. In large bowl, beat corn syrup, coconut milk, sugar and eggs at medium speed until smooth. At low speed, beat in butter and liqueur. Stir in nuts. Pour into crust.

3. Bake 40 to 50 minutes or until golden brown and puffed on edges with a few cracks, and knife inserted in center comes out wet but clean. Cool completely on wire rack.
