Ingredients

  • 2 sirloin tip roast (each about 1 pound) cut into 1/4-inch strips
  • 1 cup apple cider vinegar
  • 2 tablespoons kosher salt
  • 2 tablespoons packed dark brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon hot sauce
  • 1 teaspoon onion powder
  • 2 (each 7 1/2-ounce) cans coca cola, divided
  • 2 tablespoons minced garlic
  • Jane's Krazy Mixed-up salt

Preparation

Step 1

1. Have roast sliced into 1/4-inch strips when you purchase it. In a small saucepan over medium heart, combine vinegar, kosher salt, brown sugar, molasses, hot sauce and onion powder. Bring to a boil. Reduce heat and stir well Remove from heat and let cool. Add i can of Coca-Cola.

2. Stack strips in a 10-inch square pan and pour marinade over each layer. Cover and refrigerate. Marinate for at least 4 hours, turning once, if not completely covered with marinade Remove from marinade and pat dry. Place in a disposable aluminum foil pan

3. Preheat smoker to 180 degrees F. Fill water pan with remaining can of Coca Cola, 1/2 cup water and 2 tablespoons mince garlic. Sprinkle generously with Jane's Krazy salt and place on middle and tip racks in smoker. Do not let strips touch. Smoke for at least 3 1/2 to 4 hours, checking for doneness and dryness after 3 1/2 hours, or until internal temperature reaches 145 degrees F. If not ready, continue smoking for another 30 minutes, until meat is a dark color inside and out.

4. Let cool. Place in a resealable bag and refrigerate for several hours or freeze for up to 3 months or until ready to eat.
