Mango Upside Down Orange Cake

Ingredients
- 1 T. butter, melted
- 1/4 c. firmly packed brown sugar
- 1 1/2 c. thinly sliced peeled mango (2 medium)
- 1 c. flour
- 3/4 t. soda
- 1/8 t. salt
- 1/4 c. butter, softened
- 2/3 c. sugar
- 2 t. grated orange rind
- 1 t. vanilla
- 1 large egg
- 1/2 c. plain fat-free yogurt

Step 1
Coat bottom of 9" round cake pan with melted butter. Sprinkle with brown sugar. Arrange mango starting at center to edge.
Combine flour, soda and salt; stir well. Set aside. Beat 1/4 c. butter and sugar on medium speed of mixer until well blended. Add orange rind, vanilla and egg; beat well. Add flour mixture to creamed mixture alternating with yogurt, beginning and ending with flour; beat well after each addition. Pour batter over mango.
Bake 350* for 30 minutes or until tooth pick comes out clean. Let cool in pan 5 minutes on a wire rack. Loosen cake from sides of pan, usnig a narrow metal spatula. Invert onto a cake plate, and cut into wedges. Serve cake warm.
