Ingredients
- 4 T unsalted butter
- 3 T all purpose flour
- 1/4 cup white wine
- 2 cups whole milk
- 1 t hot sauce
- 1 t kosher salt
- 1/4 t white pepper
- 1/4 t saffron
- 1 cup grated Gruyere
- 1 pound crabmeat, crawfish or cooked shrimp

Step 1
Melt butter on low in large saucepan ad cook without allowing the butter to brown. Once butter stops foaming whisk in flour and cook on low about a minute to a blonde roux.
Add wine and stir and whisk in milk gradually.
Add hot sauce, salt, white pepper and safron and stir well. Simmer while you whisk abut 10 minutes.
Remove from heat and stir in cheese. Add and adjust your salt.
Serve with crusty baguette or tortillia chips.
