Ingredients
- 1 chicken, about 3 lbs
- 3/4 cup soy sauce
- 1 tablespoon honey
- 1/2 cup brown sugar
- 1 1/2 cups water
- 2 tablespoon fresh ginger, grated
- 3 cloves of garlic, minced
- 1 star anise
- 1/4 cup green onions, chopped
- 2 tablespoons sherry
- 2 tablespoons cornstarch mixed with
- 4 tablespoons cold water
- Chinese parslely (cilantro) for garnish

Step 1
Clean and wash chicken carefully.
Combine soy sauce, honey, brown sugar, water, and seasonings-everything but the cornstarch mixture.
Let liquid simmer for 2 minutes, after bringing it to a boil, to dissolve honey and sugar, and develop flavor.
Add the whole chicken. Cover and simmer 40 minutes, or until tender. Remove chicken, cut into segments and arrange on platter. Add cornstarch and water mixture to the sauce and bring to a boil. Simmer for a few seconds. stirring constantly, until mixture is slightly thickened and clear. Pour over chicken and garnish with cilantro. Serves 4-5.
