Apple Granola Bite Truffles

Ingredients
- 15 vanilla sandwich cookies
- 2 tablespoons unsweetened applesauce
- 1 teaspoon ground cinnamon
- 1 cup pumpking spice granola
- 1 1/2 cups white chocolate chopped into pieces

Preparation
Step 1
1. Line a cookie sheet with wax paper and set aside.
2. Process the cookies in a food processor until fine crumbs form, about 1 minutes. Add the applesauce and cinnamon and process until a dough begins to form, about 30 seconds. Transfer to a clean bowl. The mixture will be moist.
3. If your granola is very clumpy, add it to the food processor and process until it breaks down to pea size pieces, about 10 seconds. Be sure not to overprocess, as you don't want a powdery consistency; a mixture of fine and medium pieces is good. if your granola already looks like this, skip this step. Transfer to a bowl and set aside.
4. Using your hands, evenly mix 3/4 cup of the granola into the dough. roll the dough into1 inch balls. Place on the prepared cookie sheet and refrigerate uncovered for 45 minutes.
5. While the balls are in the refrigerator, melt and temper the white chocolate. Dip each ball into the white chocoalte, and return to the prepared cookie sheet. Sprinkle all with the remaining 1/4 cup granola. Refrigerate utnil solid, about 1 hour.
