  • 8 oz. bittersweet or semisweet chocolate, chopped
  • 1 -2 Tbs. freshly ground ancho chili, or ancho chili powder
  • 6 egg yolks
  • 2 Tbs. flour
  • 6 egg whites
  • 1/3 cup sugar

Preparation

Step 1

preheat to 350
grease and flour a 10" springform pan
in small heavy saucepan, melt choc. over low heat, stirring consantly
remove from heat and stir in ancho
set aside
in med. mixing bowl, beat egg yolks on high speed about 5 min. or till thick and lemon colored
by hand fold in cooled chocolate mix
gently fold in flour
set aside
wash beaters thoroughly
in large mixing bowl, beat egg whites on med. speed to soft peaks
gradually add sugar
beat till stiff peaks
by hand stir 1 cup beaten egg whites into choc. mix
fold chocolate mix into remaining egg whites
turn into prepared pan
bake 25-30 min. or till set and toothpick comes out clean
cool on wire rack
run sharp knife around rim of pan
remove ring of pan
to serve dust slice with powdered sugar
