Ingredients
- 10 eggs
- pinch of cayenne pepper
- 3 oz chopped ham
- 6 oz. muenster cheese, grated
- 4 tbsp evoo
- 3 bunches of scallions, cut into 2 inch pieces
- kosher salt and freshly ground pepper

Step 1
position rack in center of the oven and breheat broiler. whisk eggs, 2 tbsp water and cayenne in a large bowl. fold in ham and 1/2 cheese
heat 1 tbsp evoo in an oven proof 6-8 inch non stick skillet over medum high heat, swirling to coat the pan. add the scallions, 1/4 tsp salt and black pepper to taste; cook until soft, 4-5 minutes. reduce the heat to medium low, pour in the egg mixture and stir gently with rubber spatula to distribute the fillings. cook until the bottom is just set, about 4 minutes. sprinkle with remaining chees on top. transfer to oven and bake util puffed and golden about 10 minutes. let stand before serving.
