Ingredients

  • 6 C. torn mixed greens or romaine
  • 2 medium tomatoes, cut into wedges
  • 1 small cucumber, peeled, halved lengthwise and thinly sliced
  • 1 small red onion, cut into thin wedges
  • 1/2 C. pitted kalamata olives
  • 1/2 C. crumbled feta cheese....2 oz
  • 1 recipe for Greek Vinaigrette
  • 2 small pita bread rounds, cut into wedges

Preparation

Step 1

In a salad bowl, combine salad greens, tomatoes, cucumber, onion, olives and cheese.

Add Greek Vinaigrette, toss and coat. If desired, serve with pita bread. Makes 4 side dish servings.

GREEK VINAIGRETTE

In a screw top jar, combine 2 T olive oil, 2 T lemon juice, 2 tsp. snipped fresh oregano or 1/2 tsp dried oregano, crushed; 1/8 tsp salt; and 1/8 tsp pepper.

Cover and shake well. Makes about 1/4 C.

To make GREEK CHICKEN SALAD: Prepare as directed above except add 2 C shredded cooked chicken or turkey to salad.

Makes 4 main-dish servings.
