LOBSTER CHOWDER
Chock full of goodness. Very good. An expensive seafood stretches well this way.

Ingredients
- 2 medium potatoes, diced
- 1 medium onion, diced
- 1 cup water
- 1 1/2 cups milk
- 1 cup light cream
- 1 tsp salt
- 1/4 tsp pepper
- 5 oz. canned lobster, cartilage removed
- 2 tbsp butter
- 1/2 cup milk
- 3 tbsp all purpose flour

Preparation
Step 1
Bring potato and onion to a boil in a water. Simmer, covered, until cooked. Do not drain.
Add next 6 ingredients. An additional 5 oz. of lobster may be added if desired. Bring to a simmer.
Mix second amount of milk into flour until no lumps remain. Stir into simmering soup to thicken. Serve hot.
