- 2 cups water
- 2 cups sugar
- 5 Royal Gala apples
- 2 baking sheets
- 2 parchment paper sheets

Step 1
Preheat oven to 250 degrees.
Simple Syrup:
Pour the two cups of water and sugar into your pan, and bring it to a boil. Stir it once it comes to a boil to make sure there's no sugar stuck to the bottom of the pan and it's all dissolved. Once it's clear, turn off the heat and set aside.
Slicing of Apples:
Using a mandolin slice off the rounded side of the apple until you get a nice wide piece of flesh. Then start making your slices for the chips. Keep going right through the center of the apple.
Using a knife remove any seed fragments, stems, or fuzzy bits from the bottom of the apple.
Place the apples in the simple syrup and soak for 15 minutes stirring occasionally.
Using tongs, lift the apples one by one from the syrup, shake off the excess and place them on the parchment paper.
Don't overlap them, but try to get as many on the baking sheets as you can. Sprinkle cinnamon over top of apples.
Bake for 1 1/2 hours.
Refrigerate simple syrup for the next batch.
