Ingredients
- 3 Cold boiled potatoes
- 3 Cans beets
- 1/2 Cup sweet pickles
- 1/4 Cup finely chopped onions
- 1/2 Tbsp. Horseradish
- 1 Tbsp. Mustard
- 3 Finely chopped eggs
- 3 Herring pieces (finely chopped)
- 1 Cup sour cream
- Salt

Step 1
Dice potatoes, beets and pickles. Mix all with a splash of apple cider vinegar. Salt to taste. Add sour cream and mix again. Add beet juice for desired consistency.
