Ingredients

  • 2 lbs. Fresh green beans
  • 2 T Butter
  • 1 sm Onion, chopped
  • 10 oz. Mushrooms, sliced
  • 3 T Flour
  • 1 C Chicken broth
  • 1 C Heavy cream
  • 1/2 C Potato Chips (may omit)

Preparation

Step 1

1. Simmer green beans in water until crisp, tender. Drain, rinse in cold water until cool.

2. Melt butter in same skillet. Add onions and mushrooms, season with salt and pepper. Cook until brown.

3. Stir in flour for 1 minute. Will be dry. Gradually stir in broth and cream until thickened. Season with S & P.

4. Spoon sauce over green beans and sprinkle top with potato chips.
