Place the pineapple on its side on top of a cutting board. Holding it steady, use a serrated knife to cut off the top and bottom.

Step 2

Stand the pineapple up on one of the cut ends and, working from the top downward, trim away the skin strip by strip all the way around, leaving as much of the flesh as possible.

Step 3

Using a small paring knife or the tip of a vegetable peeler, cut out any large eyes.

Step 4

With the pineapple standing upright on one end, cut it into quarters with the serrated knife. Lay the pieces flat on the cutting board. Holding the knife on a slight diagonal, cut out and discard the woody core of each piece. Cut the pieces as desired.
