Ingredients

  • 5 cups broccoli florets
  • 1 Tbsp lemon rind
  • 1 Tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1 1/2 pound peeled and deveined large shrimp
  • cooking spray
  • 2 Tbsp olive oil
  • 1/4 tsp crushed red pepper
  • Garlic-Basil Corn
  • 2 Tbsp softened butter
  • 1 Tbsp chopped fresh basil
  • 1 minced garlic
  • 4 ears of corn

Preparation

Step 1

Preheat oven to 425 degrees
Cook broccoli in boiling water 1 minute and then plunge into ice water
Combine 1 1/2 tsp rind, juice, 1/4 tsp salt and 1/4 tsp pepper. Add shrimp and toss to coat. Arrange shrimp and broccoli in single layer baking sheet and bake at 425 degrees for 8 minutes or until shrimp is done.
Combine oil, 1 1/2 tsp rind, 1/4 tsp salt, 1/4 tsp pepper and crushed red pepper. Add broccoli and toss.

For corn: Comgine butter, basil and garlic and spoon mixture over cooked ears of corn
