Ingredients
- Ingredients for Meatloaf
- 1 lb ground lean pork
- 1 lb ground sirloin
- 1-1/2 cups bread crumbs
- 1 chopped onion
- 2 eggs
- 1 shredded carrot
- 2 cided stalks of celery
- 1/2 red or yellow diced pepper
- 4 cloves diced garlic
- 1/2 cup chopped parsley
- small can tomato sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp sage
- dash of nutmeg
- Ingredients for Filling
- 1-1/2 cups mushrooms, sliced
- butter to saute
- 1 cup sour cream
- Ingredients for Gravy
- 1 cup shitake mushrooms
- chicken broth
- 2 tsp cornstarch diluted with water
- 1/4 cup white wine
- 1/4 cup cream or half-and-half

Preparation
Preheat oven to 350 degrees.
In large mixing bowl, blend meatloaf ingredients by hand until well-blended.
Place two-thirds of meatloaf mixture into loaf pan.
Create a trough in the meatloaf.
In skillet, heat butter over medium-high heat until melted. Add mushrooms and saute. Cool. Blend in 1 cup sour cream.
Put mushroom filling into meatloaf throve. Cover with remaining meatloaf mixture.
Place meatloaf on center rack in oven and bake for 1 hour.
While meatloaf is baking, boil 1 shitake mushrooms in a cup of water for 15 minutes. Heat chicken broth. Add in mushrooms. Thicken mixture with cornstarch. Add white wine and cream. Blend gently. Keep warm until meatloaf is finished baking.
Serve meatloaf cut into slices with gravy over top or on the side.
