Ingredients
- 1 medium onion, quartered
- 1/2 cup butter
- 1 1/2 lbs. zucchini
- 2 1/2 cups chicken broth
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- Fresh ground pepper
- 1 cup heavy cream

Preparation
Step 1
Insert metal blade into food processor. Chop onion about 5 seconds. Saute onion in butter.
With shredding disk, shred zucchini using moderate pressure on the pusher. Add zucchini and chicken stock to the onion. Simmer, covered, for 15 minutes.
Using metal blade, puree zucchini mixture in two batches, adding 1/2 teaspoon nutmeg, basil salt and pepper. Combine batches, add cream and stir until well mixed. Taste for additional seasoning.
Serve hot or cold.
