Ingredients
- 1 T e.v. olive oil
- 1 large Onion, diced
- 1 large Garlic Clove
- 1/2 lb. Smoked Ham, diced
- 1 or 2 27 oz can Seasoned Mixed Greens, drained and pressed
- 1 can Blackeyed peas, drained and pressed
- 1 cube Chicken Bouillon
- 2 T Salsa
- 6 oz Shredded Parmesan Cheese

Preparation
Step 1
1. Lightly cover bottom of fry pan with olive oil. Sautee diced onion. Add garlic clove (pressed or finely minced).
2. When onions begin to turn clear, add diced ham. Stir and heat for a few minutes, then add mixed greens.
3. Add blackeyed peas. Continue to stir and incorporate ingredients.
4. Crumble chicken bouillon cube over all. Add salsa and mix well.
5. Sprinkle with grated Parmesan cheese.
6. May serve over rice.
