Seafood, Grilled Mahi Mahi with Olive oil and Lemon

Really simple and delicious. Would be good with salsa added or a cream sauce.

Ingredients
- 1 dash pepper
- 1/4 teaspoon salt
- 2 teaspoons extra virgin olive oil
- 2 teaspoons lemon juice
- 2 cloves garlic, minced
- 16 oz. mahi mahi

Preparation
Step 1
1. Cut Mahi Mahi into 4 pieces.
2. Brush both sides of fish with olive oil and lemon juice. Sprinkle with salt and pepper, then rub garlic on fish.
3. To grill, arrange fish on a grill rack or grill basket sprayed with olive oil cooking spray.
4. Grill over medium-hot coals (or medium-high on gas) for 4-6 minutes per 1/2 " thickness or until fish flakes easily. If fish is more than 1" inch thick, gently turn halfway through.
5. To broil, arrange fish on broiler pan sprayed with cooking oil. Broil 4 "inches from heat, same amount of time as grilling.
