Ingredients
- 12 potato cheese pierogies (Mrs. T's Brand)
- 1 medium onion, chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon ground black pepper
- 1 teaspoon finely chopped garlic
- 1 package (10 oz) frozen chopped spinach, thawed
- 3 1/2 ounces fat free mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- I Can't Believe Its Not Butter Spray

Preparation
Step 1
Preheat oven to 350ºF.
Place pierogies in a pot of hot tap water to thaw. Spray a 3 quart casserole dish with butter spray; set aside.
In a large pan, spray with Pam and saute onion, Italian seasoning, pepper and garlic. Stir in thawed spinach and continue cooking until spinach mixture is heated through, about 2-4 minutes. Remove from heat. Add cheeses and blend well.
Place thawed pierogies in casserole dish and top with spinach mixture. Spritz with butter spray.
Bake 15-20 minutes until heated through.
