Ingredients

  • 1 small pineapple
  • 1 small red onion, diced
  • 3 Tbsp chopped cilantro
  • 2 Tbsp fresh lime juice
  • 1 Tbsp rice vinegar
  • 2 Tbsp extra-virgin olive oil
  • 1 tsp salt
  • 1/2 fresh jalapeño chile, seeded and minced

Preparation

Step 1

1. Preheat grill to medium-high.

2. Cut off leafy top of pineapple and enough of bottom so fruit rests flat on a cutting board. Slice off skin and remove any “eyes” with a paring knife. Cut fruit into 4 or 5 slabs.

3. Grill 2 minutes per side or until fruit starts to brown.

4. Cool and dice. Mix in remaining ingredients.
