Flourless Peanut Butter Cookies - Low Carb

This cookie can work well for low carb diets if sugar substitute is used. I use 1/2 granulated sugar and 1/2 stevia. I tried using all stevia but it was to bitter for me although my husband liked it so if you like bitter go ahead and give it a try. The cream cheese makes the cookie soft. You can omit the cream cheese for a more dry crumbly cookie.

Ingredients
- 1 cup Peanut Butter - room temperature
- 1 tablespoon cream cheese - room temperature
- 1 egg
- 1 cup sugar - I use 1/2 cup granulated sugar and 1/2 cup Stevia
- 1 teaspoon vanilla

Preparation
Step 1
Preheat oven to 350 degrees
Mix Peanut Butter and Cream Cheese until well blended. Add remainder ingredients. Mix until well blended. (Just need to hand blend ingredients no mixer is needed.)
Drop teaspoons full of cookie dough onto cookie sheet. Press with fork making crisscross as you do with regular peanut butter cookies.
Bake 10-13 minutes.
