This dressing can be made ahead and refrigerated. Just give it a good whisk to re-emulsify before serving.

Ingredients
- Lemon Caper Dressing:
- 6 cups chopped romaine lettuce
- 2 cups shredded radicchio lettuce
- 1 small sweet onion , thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tbsp minced fresh parsley
- 2 tbsp minced sweet onion
- 2 tbsp extra-virgin olive oil
- 2 tbsp vegetabIe oil
- 2 tbsp lemon juice
- 1 tsp drained rinsed capers
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp granulated sugar

Preparation
Step 1
Lemon Caper Dressing: In small food processor or blender, purée together parsley, onion, olive oil, vegetable oil, lemon juice, capers, salt, pepper and sugar until fairly smooth and creamy.
In salad bowl, combine romaine, radicchio and onion; sprinkle with cheese. Toss with dressing just before serving.
