Ingredients
- 2 chayote squash, peeled and chopped (or 3 zucchinis)
- 1 tomato, chopped
- 2 - 3 carrots, peeled and chopped
- 2 yellow squash, chopped
- 2 baby eggplants
- 1 onion
- 4 - 5 garlic cloves
- 1 lb ground beef
- 1 beef bouillon cube
- salt and pepper

Step 1
1. Saute garlic and onions until fragrant.
2. Add beef and brown. Dissolve bouillon.
3. Add chayote and carrots. Cover and saute until slightly tender, about 10 minutes.
4. Add yellow squash and zucchini if using. Cover and saute until slightly tender, about 5 minutes.
5. Add eggplants. Cover and sauté until all vegetables are tender, about 5 minutes.
6. Add salt and pepper to taste. Serve over rice.
