Ingredients

large chicken or chicken pieces
1 carrot
2 celery
1 onion
2 c chcken broth
Bouquet garni-parsley,thyme,bay leaf,cloves leeks

Preparation

Step 1

Place chicken in a large pot
Cover with chicken stock and water to cover to 2 in above
Add rest of ingredients
Bring just to a simmer
Cover with a parchment paper and simmer slowly for 30 min for whole chicken-less for chicken breasts
