Ingredients

  • 1 lb uncooked shrimp
  • 2 lbs winter squash (butternut, acorn - peeled, seeded and cut into cubes)
  • 3 T butter
  • 2 t curry powder
  • 1 large onion chopped
  • 6 cups chicken broth
  • Salt and Pepper to taste

Preparation

Step 1

Melt butter in soup pot. Add curry and cook 1 minute. Add shrimp, cook until opaque (3-5 minutes). Remove and store in refrigerator. Add onions, cover and cook about 5 minutes. Add squash and broth, bring to a boil, cover and simmer until tender (40 min). Puree in blender. Return to pot, season to taste. Stir in shrimp and heat through.

Garnish with yogurt or sour cream & chives or parsley.
