Vegegtable Barley Soup

Ingredients
- 3 cups beef broth
- 3 cups V-8 Juice
- 2 Tablespoons vegetable oil
- 2 Bay leaves
- 1 cup water
- 1 cup diced celery
- 1 cup diced potato
- 1 cup sliced carrot
- 1 cup chopped onion
- 3/4 cup instant barley
- 4 garlic cloves minced
- 1 Tablespoon Italian Seasoning
- 3/4 teaspoon lemon pepper seasoning
- 1 teaspoons dried crushed rosemary
- 1 1/2 teaspoon fennel seed
- 1 1/2 teaspoons mint
- Parmesan Cheese
Preparation
Step 1
Saute Vegetables in oil until softened, add garlic and spices and allow to become aromatic. Deglaze with beef broth and V-8 juice.
Cover and simmer for about 2 1/2-3 hours until vegetables are tender. Add barley and cook for additional 10 minutes.
Serve with parmesan cheese.
