Ingredients
- 2 egg whites
- 1 cup flour
- 2/3 cup cold water
- 2 cups canola oil
- 1-2 zucchini, sliced ¼” thick
- Salt & pepper, to taste

Preparation
Step 1
In a medium bowl, whisk together egg whites, flour, & water. In a pan, heat 2 cups canola oil over medium heat. Use a fork to dip the zucchini into the batter & put in the oil. Flip when zucchini is light brown. Drain on a paper towel-lined casserole dish. Sprinkle each batch with salt & pepper when they’re done.
