Ingredients

    cup seasoned bread crumbs

  • 1/2

    cup plus 4 tsp parmesan cheese, divided

  • 1

    cup flour

  • 3

    large eggs, whisked until foamy

  • 4

    chicken breasts (about 6 oz each)

  • Salt and pepper

  • 1/2

    cup olive oil

  • 1/2

    cup tomato sauce, warmed

  • 1/2

    cup shredded pizza cheese

Directions

Preheat oven to 400 1. Combine bread crumbs and ½ cup parmesan cheese in shallow bowl. Put flour and eggs in separate shallow bowls. 2. Place chicken between triple thicknesses of plastic wrap; flatten with meat mallet to a uniform ¼ inch. Remove and season with salt and pepper. 3. Coat each breast well with flour, dip in egg until well coated, then dredge in bread crumb mixture. 4. Heat oil in and cook breasts until edges turn golden-brown on both sides. Drain on paper towels. 5. Place chicken on parchment paper-lined baking sheet. Spread each breast with 2 T sauce; top with 2 T shredded cheese and 1 tsp parmesan. Bake 8 min., just until cheese is melted.
