Slow Cooker Lentil Soup

Ingredients
- 4 cups hot water
- 1 (14 1/2 oz.) can tomatoes
- 1/4 cup tomato juice
- 3 medium potatoes, peeled and diced
- 3 carrots, thinly sliced
- 1 onion, chopped
- 1 rib celery, sliced
- 1 cup dry lentils
- 2 garlic cloves, minced
- 2 bay leaves
- 4 teaspoons curry powder
- 1 1/2 teaspoon salt (may not need with ham/kielbasa)
- Sour cream

Preparation
Step 1
Combine all ingredients except sour cream in slow cooker.
Cover and cook on low for 8 hours. Remove bay leaf (and ham bone, if used -dicing meat from bone and returning to cooker).
Serve with sour cream on top of individual servings and crusty bread as a go-along.
NOTE:
Can add ham bone or thinly sliced kielbasa.
