Ingredients

  • 1/4 c. Oil
  • 1 clove Minced garlic
  • 1 c. Chopped Onion
  • 1 c. Chopped celery
  • 2 6 oz cans Tomato Paste
  • 1 10.5 oz can Beef Broth
  • 1 1/2 qts Water
  • 1 c. Chopped Cabbage
  • 1 10 oz pkg. Frozen Peas & Carrots
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. Rosemary
  • 1 can Kidney beans (not drained)
  • 1 c. Dry Elbow macaroni
  • Parmesan cheese

Preparation

Step 1

Heat oil in a large kettle and saute garlic, onion and celery for 5 minutes. Stir in tomato paste and next 7 ingredients - except cheese - and cook for 15 minutes longer. Garnish with Parmesan cheese.

Freezes well.
