Ingredients

  • 30 oz (840 g) black beans, rinsed and drained
  • 1/2 (1/2) large sweet onion (such as Vidalia), chopped fine
  • 2 (2) tomatoes, seeded and chopped
  • 1/2 cup (125 mL) chopped fresh mushrooms
  • 1 (1) fresh jalapeno pepper, seeded and minced
  • FOR THE DRESSING
  • 1/2 cup (125 mL) CRISCO® Vegetable Oil
  • 1 tsp (5 mL) chili powder
  • 1 (1) large clove garlic, minced
  • 1/2 tsp (2 mL) salt
  • juice from 1 large lime
  • cilantro (optional)

Preparation

Step 1

1. Toss the salad ingredients to combine. In a small bowl, whisk the dressing ingredients. Pour dressing over bean mixture and toss well.

2. Serve salad at room temperature or chilled. Garnish with cilantro sprigs.
