Ingredients
- 30 oz (840 g) black beans, rinsed and drained
- 1/2 (1/2) large sweet onion (such as Vidalia), chopped fine
- 2 (2) tomatoes, seeded and chopped
- 1/2 cup (125 mL) chopped fresh mushrooms
- 1 (1) fresh jalapeno pepper, seeded and minced
- FOR THE DRESSING
- 1/2 cup (125 mL) CRISCO® Vegetable Oil
- 1 tsp (5 mL) chili powder
- 1 (1) large clove garlic, minced
- 1/2 tsp (2 mL) salt
- juice from 1 large lime
- cilantro (optional)

Preparation
Step 1
1. Toss the salad ingredients to combine. In a small bowl, whisk the dressing ingredients. Pour dressing over bean mixture and toss well.
2. Serve salad at room temperature or chilled. Garnish with cilantro sprigs.
