Dirty Risotto

Ingredients
- 5 c chicken broth
- 2 tbsp unsalted butter
- 2 oz. pancetta, chopped
- 6 oz. spicy italian sausage, casings removed
- 3/4 c finely chopped onion
- 1 c chopped red bell pepper
- 4 oz. button mushrooms, coarsely chopped
- 1 1/2 c arborio rice
- 3/4 c dry white wine
- 1/2 c freshly grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 tbsp chopped fresh flat leaf parsley

Preparation
Step 1
Bring broth to a simmer in a medium saucepan. Cover and keep hot over low heat.
In a large, heavy saucepan, melt butter over medium heat. Add the pancetta and sausage and saute until golden brown, about 5 mins. Add onion, pepper, mushrooms and saute until tender. Add rice and stir to coat with the oil. Add the wine and simmer until au sec. Continue cooking by adding 1/2 c broth at a time stirring constantly and allowing all the liquid to be incorporated before adding more. Remove from the heat and stir in parmesan, salt and pepper. Sprinkle with parsley and serve immediately.
